The day begins at the local market, where we'll explore ingredients, learn how they are selected, and understand their role in Zapotec cooking. From there, we'll move into a hands-on cooking class that goes beyond technique, offering insight into family recipes, seasonal rhythms, and the cultural meaning behind each dish, followed by a shared lunch.

In the evening, we’ll gather for a farewell dinner at Adamá, a highly regarded restaurant in Oaxaca known for its vibrant take on Mediterranean and Middle Eastern–inspired cuisine with a local touch. Chef Hagar Aviram’s menu focuses on fresh, shareable dishes, from perfectly spiced falafel and creamy hummus to charcoal-kissed kebabs and seasonal plates that reflect both Levantine roots and Oaxaca’s rich produce. The warm courtyard setting encourages lingering conversation, making it a fitting final dinner to celebrate the journey we’ve shared.
