Starters:
Arabic Salad or Hummus
Spreads are a very important part of Jordanian cuisine, especially hummus. Hummus is also widespread in other Middle Eastern countries. In Jordan, we found a wide variety of hummus:
Traditional hummus with chickpeas, lemon juice and olive oil
Fattened hummus refined with crumbled flatbread, tahini and pine nuts
Hummus flavoured with various vegetables, such as avocado or tomato puree
You can also have this for breakfast, lunch and dinner - hummus is practically always available in Jordan. The combination with flatbread and falafel is particularly delicious. You can get the best hummus in small street shops that prepare it fresh. You can also choose between the different varieties there.
Every meal comes with a starter & arabic salad.
Main Dishes
Mansaf
Recognized as the national dish of Jordan, Mansaf is traditional and authentically Jordanian. This dish which is often served on a large platter and is intended to be shared usually consists of cooked lamb or chicken which is prepared in a fermented yogurt sauce. The meat is then served over rice and sometimes bulgar with herbs.
Maklouba
This is a traditional Middle Eastern Rice Dish that literally translates to Upside Down in arabic. It gets its name because of the way it’s made. You layer all the meat or chicken and vegetables in the pot with the rice and once it’s cooked it’s flipped upside down onto a platter.
But there are many more dishes and it depends on our Bedouin Chef. Of course we are able to prepare vegetarian dishes as well.
Koefta
In the simplest form, koftas consist of balls of minced meat—usually beef or chicken —mixed with spices and sometimes other ingredients.
Our dishes go with Vegetable Mix, Rice, Bread or potatoes.
